When I think of baby showers or ladies’ luncheon menus, cucumber dill sandwiches always come to mind. Growing up these were always a favorite at parties and potlucks. When I switched to a plant-based diet, I missed these refreshing little sandwiches. I was so excited when I created this recipe for Vegan Cucumber Sandwiches. Now I have something to bring to parties that vegan friends and everyone else can enjoy!
This recipe vegan cucumber sandwich uses two of my favorite products from Trader Joes, vegan cream cheese and onion salt. I have tried many other brands Trader Joe’s vegan cream cheese is by far the best one I have found. It doesn’t have that strange almond after taste or tang that you get from other cream cheese imposters. The other key ingredient is Trader Joe’s onion salt – I use it on everything. It might be my favorite thing in my spice rack.
This is the easiest recipe in the world. In fact, it is so easy, my kids make these for a snack without any help from me. Sometimes we change it up by adding radish slices instead of cucumbers. Many of the classic cucumber sandwich recipes use rye bread, which is tasty, but we typically use what we have around the house. I usually cut wheat bread into little squares or if I’m really in a Martha Stewart kind of mood, I use a tiny cookie cutter to make fun shapes!
